Maureen Brandt of Stillwater, Minn. Nabs Job as Chef de Cuisine for 150 Central Park Onboard Allure of the Seas

MIAMI, Aug. 9 /PRNewswire/ -- After hosting an eight week-long contest, which culminated with five intense hours in the competition kitchens at The Culinary Institute of America, Royal Caribbean International has found the next culinary superstar to lead the kitchen of the signature restaurant onboard Allure of the Seas, the cruise line's newest ship which will make her debut in December 2010 and share the title of world's largest and most innovative cruise ship with sister-ship Oasis of the Seas.  Maureen "Molly" Brandt of Stillwater, Minn. has landed the job of a lifetime: a one-year paid contract to be the Chef de Cuisine of 150 Central Park onboard Allure of the Seas.
 
Brandt was one of six chefs – all graduates of The Culinary Institute of America (CIA), the world's premier culinary college – to be a finalist in the Allure of the Seas Culinary Challenge, a contest open exclusively to the CIA's network of 40,000 alumni.  The six chefs participated in a two-part final challenge at the college's Hyde Park campus in New York on August 5 & 6, where they were each required to showcase their culinary prowess and creativity by participating in an interview with, as well as preparing a three-course meal for, an esteemed panel of judges from Royal Caribbean and The Culinary Institute of America.

After her entry video was selected as the "fan favorite" in the consumer voting portion of the contest, Brandt went on to impress the judges at the Final Challenge by serving up a menu consisting of Chilled Lobster with fennel, carrots, citrus, caviar and tempura battered lobster mitt; Provencal Lamb Loin with Dijon potato puree, ratatouille, pattypan squash and olive tapenade; and Pistachio Cake with whipped rosewater creme fraiche and carbonated raspberries.

A 2006 alumni of The Culinary Institute of America, Brant was named a Food and Wine best student chef in 2006.  While in training she worked at the Food Network as a culinary extern, where she prepared food for a variety of production projects including "Iron Chef America," "Emeril Live," and "Semi-Homemade with Sandra Lee."  Immediately following graduation, she spent a year as a teaching assistant in the CIA's Escoffier restaurant, before going on to work in the kitchens at many reputable restaurants in New York, Minnesota and abroad, including the critically acclaimed, Michelin starred Cafe Boulud in New York City.  Currently Brandt owns her own private chef and catering company, Cook in the Kitchen in the Twin Cities.  She is also the co-founder and villa chef for Flavors of Italia, a company that offers intimate, culinary-focused vacations in Northern Tuscany.
Located in the lush and tropical grounds of the ship's Central Park neighborhood, 150 Central Park will feature decor that will embrace the mellow earth tones, unique textiles and fixtures inspired by nature's four seasons. Inspired by the simple elegance concept of trend-setting restaurants in Chicago, New York and Los Angeles, each detail of 150 Central Park will be dedicated to enhancing the dining ambiance, from the tabletops to the service team uniforms. The restaurant menu and certain design aspects will be developed and determined by the winning chef of the Allure of the Seas Culinary Challenge.
 
Allure of the Seas shares the title of the world's largest and most revolutionary cruise ship with sister-ship Oasis of the Seas. An architectural marvel at sea, she will span 16 decks, encompass 225,282 gross registered tons, carry 5,400 guests at double occupancy, and feature 2,700 staterooms. Allure of the Seas will tout Royal Caribbean's exclusive neighborhood concept of seven distinct themed areas, which will include Central Park, Boardwalk, the Royal Promenade, the Pool and Sports Zone, Vitality at Sea Spa and Fitness Center, Entertainment Place and Youth Zone. Royal Caribbean second quarter earnings report spikes stock price 6.35%

Two weeks ago, Royal Caribbean (NYSE:RCL) announced better than expected earnings for its second quarter report with EPS of $0.28 on sales of $1.6 billion, beating EPS estimates by $0.09 and missing revenues estimates by $19 million.  Since then, the Royal Caribbean stock price has risen 6.35%, from $27.56 to $29.31 in the last 15 days.

This is obviously great news for those who own Royal Caribbean stock as well as fans of the company, given that a stronger stock price translates out to a stronger company overall.

Royal Caribbean had sales growth of 18.7% during the last fiscal year. The company reported $6.3 billion in sales over the past 12 months and is expected to report $7.5 billion in sales in the next fiscal year according to SmarTrend.

Royal Caribbean to make more stops in Uruguay

Royal Caribbean announced that during the next tourist season, several of its ships will make stops between Montevideo and Punta del Este in Uruguay. The announcement was made this past week by Michael Ronan, Royal Caribbean's Vice President of Government Relations, Caribbean, Latin America & Asia, in a meeting with national authorities that included President of the PNA Engineer Alberto Díaz, Vice-President Juan José Domínguez, Fernando Repremar Penalty SA, Uruguay agents of Royal Caribbean Cruises, Mr. Osvaldo Tabacchi ANP general manager, Captain Daniel De Leon, Luis Fontes Head of the Port of Colonia, Schubert Arq Gonzalo Mendez and Baranda.

Mr. Ronan spoke to the National Port Administration where he highlighted the main objectives of his trip, which were to exchange ideas about adapting the existing port infrastructure to the needs of tourism enterprises.  But he also warned of the need for new infrastructure to provide adequate comfort facilities for hosting thousands of travelers in each of these huge cruise ships. 

Also at this meeting Michael Ronan announced that this upcoming cruise season will feature fourteen stops in the port of Montevideo and Punta del Este. The first cruise which will visit Uruguay this season is the Splendour of the Seas, due to arrive in Montevideo on Dec. 23 at 9:00 in the morning.

Maureen Brandt wins final cooking competition to become chef of 150 Central Park

The final cooking competition is over to become the next chef at 150 Central Park on the soon to be launched Allure of the Seas and it's Maureen Brandt of Stillwater, Minnesota.  Brandt won the fan vote last month and today competed with five other chefs for the right to become the next Chef de Cuisine of 150 Central Park, the signature restaurant onboard Allure of the Seas.

Brandt competed in a day long competition and cooked three meals for the panel of judges.  Her specialties included chilled Lobster, provencial Lamb Loin and a pistachio cake.

Chef Daniel Fein came in second place and CruseCritic is reporting he has accepted the position of Chef of 150 Central Park on Oasis of the Seas, whose chef has announced previously that he will be leaving.

With Brandt winning, she completes a long trek of winning the Allure of the Seas Culinary Challenge, which started back in early July 2010.  She submitted a video of her cooking a dish and explaining why she should be considered for the contest.  She then made it to the final six competitors, won the fan vote and today has won the cooking competition.

Brandt is a 1999 graduate of Stillwater Area High School and she is also a "Certified ProChef Level Three" by the Culinary Institute of America and CEC through the American Culinary Federation.

The panel of judges for the cooking competition included Culinary Institute of America Chef Lou Jones and Dr. Victor Gielisse and from Royal Caribbean Senior Vice President of Hotel Operations, Lisa Bauer; Vice President of Food & Beverage Operations Frank Weber.

Jewel of the Seas suffering mechanical problems

A mechanical problem today caused Royal Caribbean's Jewel of the Seas to miss a port on its scheduled itinerary.  Jewel of the Seas was scheduled to stop in Stockholm, Sweden but had to skip the port after a problem with the ship's propulsion.

Royal Caribbean spokeswoman Cynthia Martinez, stated that it was a problem with “one of the four hydraulic motors on the starboard propulsion system”.  Martinez confirmed that the problem is expected to be fixed within a matter of days.

"We carried out preliminary repairs in Harwich (England) on Saturday," Martinez tells USA TODAY. "However, we are awaiting a replacement hydraulic motor and will conduct (further) repairs while the ship is in St. Petersburg, Russia."

Martinez added that the Jewel of the Seas today is skipping Stockhold and instead stopping at Visby, Sweden, from 7:00 a.m. to 3:00 p.m. On Wednesday, she will arrive at Helsinki, Finland and remain there from 10:00 a.m. to 6:00 p.m. By Thursday the ship will arrive in St. Petersburg at 7:30 a.m. and depart on Friday at 6:30 p.m.

Royal Caribbean's presence in Italy is growing

Royal Caribbean Vice President Michael Bayley visited the new Royal Caribbean headquarters in Italy, the second largest in the world, that had opened in 2010 to announce that Royal Caribbean will handle 60% more passengers in 2011.  Next year will see 2.5 million passengers, airports will grow by 35% to a total of 671 calls at 17 ports.

With Royal Caribbean's addition of 3 Voyager class ships to Italy, about 3,300 passengers will now sail in and out of Italy. Navigator of the Seas docks at Civitavecchia, Voyager of the Seas for the first time in Venice and Mariner of the Seas for the first time will dock in Genoa.

Royal Caribbean is planning on its ships visiting a number of Italian ports, including Civitavecchia, Venice, Livorno, Naples, Messina, Ravenna, Bari, Cagliari, Palermo, La Spezia, Sorrento Salerno, Portofino, Genoa, Portoferraio, Santa Margherita and Trieste.

Adventure of the Seas move to Europe required onboard changes

Royal Caribbean has moved a lot of its ships to Europe, primarily from the Caribbean, and in a recent Royal Caribbean blog post, there was an interesting tidbit about what changes Royal Caribbean made to it's Voyager class Adventure of the Seas ship to be more accommodating for the European clientèle.

Adventure of the Seas had spent nine years in Puerto Rico, serving the south Caribbean since 2001 but was moved to Europe and the Mediterranean to help with greater demand in the area.  Because the ship was going from the Caribbean, where its customers spoke primarily English, to the Mediterranean, where a greater variety of languages were spoken, changes were necessary.  The biggest changes included ensuring Adventure of the Seas had "the appropriate language skills".

Other changes were made as well, such as changing the entertainment so it was less about language and more about the visual story being presented.  This ensured a greater percentage of guests onboard the ship could enjoy the entertainment.  To accomodate guests even further, dining times were adjust to allow for the greater demand for later dinner seatings.

Vegan cruising experience on Royal Caribbean

Anyone with a special dietary restriction knows that traveling and sticking to your diet is never easy but Charu Suri posted about her experience on a three night Royal Caribbean cruise that she took to the Bahamas and shared her experience of eating vegan while on Royal Caribbean.

Going into the cruise, Suri was worried that the options for her on board would be very limited, to the point that she'd have to eat the same boring meals every day.  Moreover, she wondered if they'd even have vegan friendly alternatives, such as soy milk instead of regular milk.

As soon as Suri was onboard, her fears were dismissed after seeing how closely the Royal Caribbean chefs were not only monitoring her dietary needs but responding to them, "The chefs on board were more aware of my dietary needs than I had given them credit for. Before long, I was feasting on Indian dishes, delicately-flavored al dente pasta and crisp, almost "farm to table" quality salads."

Suri did run into a "problem" with dessert.  Before long she was getting sick of the usual offerings and decided to ask to see if there was anything else available. She asked the Head Waiter and the very next day, she had a special dessert prepared for her based on her vegan needs.

According to a 2008 Vegetarian Times survey, around 3.8% of the American population was vegetarian, and around 0.5% was vegan.  Based on her experience, it seems eating vegan on a Royal Caribbean cruise is a very practical possibility.

Royal Caribbean warns cruisers Turkey of potential terrorist violence

Guests aboard the Splendour of the Seas received a letter in their cabins last week warning them to be extra careful if they were getting off the ship in Turkey to be extra careful because Turkey is experiencing "an increase in threats of terrorist actions" and "It is not recommended that guests travel alone, or visit any remote locations".  The warning was signed by the ship's Captain, Tommy Nyseter.

Splendour of the Seas distributed these letters at the port of Piraeus in Greece to a ship which had a majority of its cruising guests as Americans.  The letter hopes to warn its guests about potential risks found in the country that can be overlooked due Turkey's "warm and welcoming" residents.

The U.S. Department of State issued a warning to American tourists "to be alert to the potential for these types of incidents in urban and tourist areas" and Royal Caribbean's letter echoes the sentiment of this warning bu making in no uncertain terms a firm warning to be vigilant.

Second quarter report spikes Royal Caribbean stock

We reported yesterday Royal Caribbean's second quarter 2010 earnings report and the news was so good that it gave the Royal Caribbean stock a nice push upwards.  Investors were happy to see shares of Royal Caribbean Cruises closed up 12 percent Thursday on positive earnings news for the second quarter and a positive outlook for the rest of the year.  

The price of Royal Caribbean stock closed up $2.98 to $27.50 at the end of trading on Thursday.  Cruise companies were battered a year ago amid the recession, and shares of Royal Caribbean and Carnival were hampered recently by fears of a double dip recession. Royal Caribbean's outlook Thursday helped put those fears to rest.
